So how does a 31 year old Midwestern girl who grew up drinking milk at every meal discover she has osteopenia? After suffering a stress fracture from running, the orthopedic doctor sent me for a DEXA scan. Thank goodness he did, because I have spent the last 14 years trying to maintain what's left of my bone density. But how did I get to that point? Looking back and after much research, I came to realize that it was the overload of caffeine and phosphoric acid that I had been ingesting (courtesy of Diet Coke) that was destroying my bones. Starting in my calorie-conscious teens, I gave up milk as a beverage and started drinking Diet Coke like I drink water today. (I drink 3 liters of water most days!) Not only does caffeine decrease the absorption of calcium, but if the ratio of calcium to phosphoric acid is out of balance, you're also leaching calcium from the bloodstream. Now let's add a high protein Atkins diet to the menu, and my bones didn't stand a chance. Too much protein decreases calcium absorption too. Considering that my diet was atrocious back then anyway, I wasn't even eating enough calcium rich foods to combat all the crap I was putting into my body.Consequently, I gave up sodas years ago (and the Atkins diet), and I only rarely let my family enjoy sodas. Please, step away from the soda! Since going dairy free and gluten free, I have really missed eating crepes and pancakes. Rejoice! Otto's Naturals and Ripple have come to my rescue! Simply blend a couple eggs with a half cup of Otto's cassava flour and add enough liquid to thin the batter to your liking. I also like to add a splash of pure vanilla extract. Ripple is thick, so if you like a thinner crepe, use coconut milk. I cook them in coconut oil and drizzle pure maple syrup. Yum!!
