This was a special day as the legendary fish “ginrou” was on the market and Amamoto was the sushi restaurant that was able to bring it home. I was fortunate to have it in two preparations: the entire head and collar simmered in sweet soy sauce and also as nigiri. Known as the perfect kinmedai (red snapper), it's said to be caught once every 50,000 times. The last time one of these surfaced in Tsukiji was in 2015. The flesh, liver and eggs were full of flavor and umami. _【 東麻布 天本 | Amamoto (Higashiazabu) 】_🍣 礼分島の馬糞雲丹_This goes a bit back in time to my July visit to Amamoto. This was a special day as the legendary fish “ginrou” was on the market and Amamoto was the sushi restaurant that was able to bring it home. I was fortunate to have it in two preparations: the entire head and collar simmered in sweet soy sauce and also as nigiri. Known as the perfect kinmedai (red snapper), it's said to be caught once every 50,000 times. The last time one of these surfaced in Tsukiji was in 2015. The flesh, liver and eggs were full of flavor and umami.
